Cheesy, Spicy Black Bean Dip
I’ve been making this dip for years. It’s so easy and whips up in 15 minutes. You can easily add meat to it for added protein, and it pairs great with wine and beer. Perfect for game day and parties!
Total Time: 15 minutes
INGREDIENTS
3 tbsp EVOO
5 garlic cloves, peeled and sliced
1/4 cup tomato paste
1 1/2 tsp smoked paprika
1/4 tsp red pepper flakes
1 tsp ground cumin
2 (14-ounce) cans black beans, drained and rinsed
1/2 cup boiling water
Salt and pepper to taste
1 1/2 cups grated cheddar cheese
DIRECTIONS
Step 1
Heat oven to 475 degrees. In an oven-safe skillet, heat olive oil over med-high. Fry garlic until golden, about 1 minute. Stir in tomato paste, paprika, cumin, and pepper flakes, and fry for 30 seconds, reducing heat as needed to prevent garlic from burning. Add the beans, water, and generous pinch of salt and pepper. Stir to combine.
Step 2
Sprinkle with cheese and bake for 5-10 minutes until cheese is melted. Serve with tortilla chips and veggies!
